When it comes to breakfast, I’m all about speed and convenience: especially when I’m headed off to work! I’d much rather sleep a little later or run a little longer in the mornings instead of worrying about eating at home. I look for something satisfying yet portable.
Instead of reaching for a calorie laden Egg McMuffin from McDonald’s or bagel with cream cheese, I often opt for a 210 calorie Jimmy Dean breakfast sandwich. They’re absolutely fantastic but can put a dent in the wallet as with all things pre-packaged.
I decided to make my own version of a pre-made egg sandwich a year ago but it didn’t turn out so well. It tasted fine but I cooked the eggs and turkey bacon in muffin tins which made the proportions to the English muffins off, and it just didn’t heat up the next day as well as the Jimmy Dean.
Over the weekend I found another recipe on Pinterest and decided to try to make freezer breakfasts again. The blogger used ramekins instead of muffin tins which helped size the eggs to better fit the muffins. These were a huge success! I ate one this morning and put the remainder in the freezer to take to work the rest of the week. These will be my new morning staple!

– You can keep these low in calorie by cooking only the egg white.
– I love Canadian bacon and cooked up one piece per sandwich instead of using ham. You may want to try other proteins and cheeses to add variety. Remember to choose wisely! The goal is to sustain a healthy lifestyle while eating on-the-go.
– I skipped the salt and pepper because we just don’t season eggs in my family. Do what you’d like!
